Ingredients
- Serves 3
- 3 cups cooked brown rice
- 360g chicken breast (skinless)
- 3 cups cherry tomatoes
- 300g green beans
- 1/2 onion
- 1-2 tsp curry powder
- Onion powder, ginger powder, lemon juice, salt, pepper
Steps
- Preheat oven to 400F (200C).
- Roast green beans for 15-30 minutes.
- Cook brown rice.
- Sauté onion in a pan.
- Add chicken pieces, tomatoes, curry powder, and spices; simmer until cooked.
- Serve curry with rice and roasted beans.
