  • Serves 3
  • 3 cups cooked brown rice
  • 360g chicken breast (skinless)
  • 3 cups cherry tomatoes
  • 300g green beans
  • 1/2 onion
  • 1-2 tsp curry powder
  • Onion powder, ginger powder, lemon juice, salt, pepper

Steps

  1. Preheat oven to 400F (200C).
  2. Roast green beans for 15-30 minutes.
  3. Cook brown rice.
  4. Sauté onion in a pan.
  5. Add chicken pieces, tomatoes, curry powder, and spices; simmer until cooked.
  6. Serve curry with rice and roasted beans.
