- 3/4 cup plain hummus
- 345g sweet potato
- 1.5 cups cooked brown rice
- 3 cups cherry tomatoes
- 300g red bell pepper
- 3 handfuls spinach

Steps
- Preheat oven to 400F (200C).
- Roast sliced sweet potato and bell peppers.
- Cook brown rice.
- Mix oil, vinegar, and lemon for dressing.
- Assemble salad with spinach, rice, roasted veggies, tomatoes, and hummus.
- Drizzle with dressing.
