  • 3/4 cup plain hummus
  • 345g sweet potato
  • 1.5 cups cooked brown rice
  • 3 cups cherry tomatoes
  • 300g red bell pepper
  • 3 handfuls spinach
  • {"Dressing"=>"3 tsp olive oil, 3 tbsp vinegar, lemon juice"}

Steps

  1. Preheat oven to 400F (200C).
  2. Roast sliced sweet potato and bell peppers.
  3. Cook brown rice.
  4. Mix oil, vinegar, and lemon for dressing.
  5. Assemble salad with spinach, rice, roasted veggies, tomatoes, and hummus.
  6. Drizzle with dressing.
