- Serves 3
- 6 slices bread
- 1 cup plain hummus
- 300g red bell pepper
- 6 cherry tomatoes
- Lettuce mix
- 3 tsp sunflower seeds
Steps
- Preheat oven to 400F (200C).
- Roast sliced bell peppers for 20-40 minutes.
- Spread hummus on bread.
- Top with lettuce, roasted peppers, tomato halves, and sunflower seeds.
