  • Serves 3 (Makes 12 cookies)
  • 1/4 cup peanut butter
  • 2 tsp chia seeds (+ 2 tbsp water)
  • 2 tbsp coconut sugar
  • 2 tbsp desiccated coconut
  • 1/2 tsp cinnamon

Steps

  1. Preheat oven to 360F (180C).
  2. Soak chia seeds in water for 5 minutes.
  3. Mix peanut butter, sugar, coconut, cinnamon, and soaked chia seeds.
  4. Form into small balls and flatten on a baking tray.
  5. Bake for 10-15 minutes.
