Healthy Peanut Butter Coconut Cookies

Ingredients
- Serves 3 (Makes 12 cookies)
- 1/4 cup peanut butter
- 2 tsp chia seeds (+ 2 tbsp water)
- 2 tbsp coconut sugar
- 2 tbsp desiccated coconut
- 1/2 tsp cinnamon
Steps
- Preheat oven to 360F (180C).
- Soak chia seeds in water for 5 minutes.
- Mix peanut butter, sugar, coconut, cinnamon, and soaked chia seeds.
- Form into small balls and flatten on a baking tray.
- Bake for 10-15 minutes.
