Healthy Chicken & Sweet Potato Curry

A healthy, warming curry packed with protein and vegetables. Served with basmati rice, it creates a hearty dinner.

  • Serves 4
  • 4 x 100g chicken breasts (skinless)
  • 4 medium sweet potatoes (peeled)
  • 2 cups cherry tomatoes
  • 1 onion
  • 1 tsp cooking oil
  • 4 tbsp pure tomato paste
  • Juice from 1 lemon
  • 2 tbsp fresh cilantro
  • 1-1.5 cups water
  • Spices (2 tsp curry powder, 1 tsp ginger, 1 tsp turmeric, 1/2 tsp garlic, 1/2 tsp cumin, 1/2 tsp cinnamon, 1/4 tsp cloves)
  • Salt and pepper

Steps

  1. Chop the onion and sauté in a pot with oil until caramelized.
  2. Chop the cherry tomatoes and add to the pot.
  3. Add lemon juice, water, tomato paste, cilantro, and all spices to the pot and stir.
  4. Slice chicken breast into pieces; peel and chop potatoes into quarters.
  5. Add chicken and potatoes to the curry.
  6. Simmer on the stove for 40-60 minutes covered with a lid, stirring occasionally.
  7. Serve with cooked basmati rice.
