Chocolate, Banana & Blueberry Toaster Muffins

  • Serves 3
  • 2/3 cup rolled oats
  • 1 medium ripe banana
  • 1/3 cup milk
  • 1 large egg (or chia egg)
  • 2 tsp coconut oil
  • 2 tsp coconut sugar
  • 1/4 cup vanilla protein powder
  • 3 tbsp unsweetened cocoa powder
  • 3/4 cup blueberries
  • 1/4 tsp cinnamon, baking soda, baking powder

Steps

  1. Preheat oven to 400F (200C).
  2. Blend oats into flour.
  3. Mash banana and mix with egg, milk, oil, and dry ingredients.
  4. Fold in blueberries.
  5. Bake in muffin tray for 20 minutes.
  6. Toast before serving and top with peanut butter and raspberries.
