Ingredients
- Serves 2
- 1.5 cups cooked brown rice pasta
- 1 cup cooked lentils
- 300g mushrooms
- 100g Brussels sprouts
- 1 cup marinara pasta sauce
- 1/2 onion
- Lemon/lime juice, pepper
Steps
- Boil pasta.
- Sauté onion in a pan.
- Add sliced mushrooms and shredded Brussels sprouts; cook until tender.
- Add cooked lentils and marinara sauce; toss to heat through.
- Serve sauce over pasta.
