  • 1.5 cups cooked brown rice pasta
  • 1 cup cooked lentils
  • 300g mushrooms
  • 100g Brussels sprouts
  • 1 cup marinara pasta sauce
  • 1/2 onion
  • Lemon/lime juice, pepper

Steps

  1. Boil pasta.
  2. Sauté onion in a pan.
  3. Add sliced mushrooms and shredded Brussels sprouts; cook until tender.
  4. Add cooked lentils and marinara sauce; toss to heat through.
  5. Serve sauce over pasta.
