Black Bean & Tahini Toast With Cherry Tomatoes

  • 1 cup cooked black beans
  • 4 slices bread
  • 2 tbsp tahini
  • 4 cherry tomatoes
  • small handful spinach/mixed lettuce
  • onion powder, oregano
  • lemon, salt and pepper

Steps

  1. Roughly smash the cooked black beans
  2. Add the tahini, lemon/lime juice, salt, pepper, oregano and onion powder to the black beans and mix to make a spread
  3. Cut the cherry tomatoes in half.
  4. Lightly toast the bread (optional) and add the black bean & tahini spread to each slice.
  5. Top with a few lettuce leaves and cherry tomato halves

Notes

If you’re making a closed sandwich, place the tomatoes between the black bean spread and the lettuce to prevent the bread from getting soggy.
