Black Bean & Tahini Toast With Cherry Tomatoes

- 1 cup cooked black beans
- 4 slices bread
- 2 tbsp tahini
- 4 cherry tomatoes
- small handful spinach/mixed lettuce
- onion powder, oregano
- lemon, salt and pepper
Steps
- Roughly smash the cooked black beans
- Add the tahini, lemon/lime juice, salt, pepper, oregano and onion powder to the black beans and mix to make a spread
- Cut the cherry tomatoes in half.
- Lightly toast the bread (optional) and add the black bean & tahini spread to each slice.
- Top with a few lettuce leaves and cherry tomato halves
Notes
If you’re making a closed sandwich, place the tomatoes between the black bean spread and the lettuce to prevent the bread from getting soggy.
