Banana & Oat Toaster Pancakes

- Serves 3
- 2/3 cup dry rolled oats
- 2 medium ripe bananas
- 4 large eggs (or chia eggs)
- {"Toppings"=>"3 tbsp peanut butter, 2 cups fresh strawberries"}
Steps
- Blend oats into a flour.
- Add bananas and eggs to blender; blend until smooth.
- Cook spoonfuls of batter in a non-stick pan until bubbling, then flip.
- Cool and store in fridge.
- To serve, heat in toaster and top with peanut butter and strawberries.

Vegan option available using chia eggs.
