Banana & Oat Toaster Pancakes

  • Serves 3
  • 2/3 cup dry rolled oats
  • 2 medium ripe bananas
  • 4 large eggs (or chia eggs)
  • {"Toppings"=>"3 tbsp peanut butter, 2 cups fresh strawberries"}

Steps

  1. Blend oats into a flour.
  2. Add bananas and eggs to blender; blend until smooth.
  3. Cook spoonfuls of batter in a non-stick pan until bubbling, then flip.
  4. Cool and store in fridge.
  5. To serve, heat in toaster and top with peanut butter and strawberries.

Vegan option available using chia eggs.
